mason's dad eggplant

goes super well with rice. recipe from none other than mason's dad

mason's dad eggplant

ingredients

  • 2 eggplant
  • 10 oz (~0.6 lbs) ground beef (80% lean, 20% fat)
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp sugar
  • 1 tsp starch
  • 1 tsp chinese black vinegar (chinkiang)

directions

ground beef

  1. heat the pan (and oil)
  2. add the meat to pan and break into large pieces
  3. break the beef into smaller pieces as it cooks
  4. cook until browned (and try not to stir)

eggplant

  1. mix all the sauces (and starch) together in one bowl (to throw in later). add in a tiny bit of water.
  2. spread out a good layer of cooking oil in the wok/pan. add garlic and turn the stove to medium-high
  3. throw in sliced eggplant and cook for 3 min. keep mixing the eggplant
  4. throw in the mixed sauce concoction. add a tiny bit of water to the empty bowl and pour again
  5. cook well!

after the eggplant is ready, add the beef into it and mix. serve and enjoy :)
